Organize your purchases into categories. Target % is the percentage of sales you aim to spend on each category.
- Revenue — items you sell (Food, Beverage). Target % is based on that category's sales.
- Expense — operating costs (Paper, Cleaning). Target % is based on total sales.
- Excluded — not tracked in COGS (Tax, Discounts).
